Could anybody offer a bit of insight as to what managers look for during a trial? I would have thought watching a player in an actual game would have been a better indication of their ability etc.

It can't do anything but help kev, getting them in for a closer look and comparing them to current players, seeing how they fare technically in drills and games or even comparing KPIs in running, strength, fitness etc. Might even be a time to try and get an understanding of character and attitude, how they might settle.
But if you were to suggest it's about what you do in a game then you're not wrong. If you're suggesting we should be looking to sign a few players we already know would walk in the side, you're 100% correct.

I have no problem with bringing guys in for a closer look, I was just wondering if anybody had a better idea than me of what a manager uses the close up time to try and look at. I suppose it could be any number of things. Probably a mix of a trial AND watching a few games would be the ideal scenario.
